Strawberry Puffcakes



Strawberry Puffcakes are cupcakes that are light and fluffy and taste like fresh strawberries, which are sweet and sour. They are wonderful as a dessert or as a sweet treat at any time of the day.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 1/4 cup powdered sugar for dusting

Instructions:

Start by heating the oven to 350F 175C

Put the flour, sugar, baking powder, and salt in a bowl and mix them together

Melt the butter and add the eggs, milk, and vanilla extract to another bowl

Whisk the ingredients together

Add the wet ingredients to the dry ones and mix them together just until they are mixed

The diced strawberries should be added slowly

Put cupcake liners in a muffin tin and fill each cup about two thirds of the way to the top with batter

Puffcakes should be baked in a hot oven for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

From the oven, take them out and let them cool in the pan for a few minutes

Then, move them to a wire rack to cool completely

Sprinkle powdered sugar on top after they have cooled

Paleo Trail Mix



This Paleo trail mix is packed with nutrient-dense nuts, dried fruits, and a hint of dark chocolate, making it a perfect snack for hiking or traveling. It's satisfying, energy-boosting, and free from grains, dairy, and processed sugars.

Ingredients:

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup unsweetened coconut flakes
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dark chocolate chips at least 70% cocoa
  • 1/4 teaspoon sea salt

Instructions:

Preheat your oven to 325F 163C

Spread almonds, cashews, and coconut flakes on a baking sheet

Toast in the oven for 8-10 minutes, until lightly golden and fragrant

Remove from the oven and let cool completely

In a large bowl, combine the toasted nuts and coconut with dried cranberries, chopped apricots, dark chocolate chips, and sea salt

Mix well to combine

Store in an airtight container or portion into small bags for easy travel snacks

Jalapeno Honey Crispy Fried Chicken BLT



A tantalizing twist on the classic BLT sandwich, featuring crispy fried chicken with a kick of jalapeno and a sweet honey glaze.

Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 2 cups buttermilk
  • 2 jalapenos, finely chopped
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Oil for frying
  • 8 slices bacon, cooked crisp
  • 8 slices tomato
  • 8 lettuce leaves
  • 1/4 cup honey

Instructions:

Put buttermilk and chopped jalapenos in a bowl and mix them together

Cover the dish and put it in the fridge for at least an hour after adding the chicken breasts

Put the breadcrumbs, paprika, garlic powder, salt, and black pepper in a different bowl and mix them together

Take the chicken out of the buttermilk mixture and let the extra buttermilk drip off

Coat the chicken all over with the flour mixture

Put oil in a pan and heat it over medium-high heat

It should take about 6 to 8 minutes per side to fry the chicken until it is golden brown and fully cooked

Take the chicken out of the oil and place it on paper towels to drain

Put honey on top of the fried chicken breasts

On toasted buns, make sandwiches by putting bacon, tomato, lettuce, and chicken drizzled with honey on them

Roasted Strawberry Rhubarb Swirled Vanilla Ice Cream



Indulge in the perfect blend of sweet strawberries and tart rhubarb swirled into creamy vanilla ice cream. This Roasted Strawberry Rhubarb Swirled Vanilla Ice Cream is a delightful treat for any occasion.

Ingredients:

  • 1 cup strawberries, hulled and halved
  • 1 cup rhubarb, chopped
  • 1/2 cup sugar, divided
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • Pinch of salt
  • 1 vanilla bean, split and scraped
  • 4 large egg yolks

Instructions:

Warm the oven up to 190C 375F

Put strawberries, rhubarb, and 1/4 cup sugar in a baking dish

Put it in the oven for 20 to 25 minutes, or until it's soft and juicy

Allow to cool

Heavy cream, milk, salt, and the seeds and pod of the vanilla bean should all be mixed together in a saucepan

Just until it starts to simmer, heat on medium-low

Take it off the heat and let it sit for 30 minutes

Whisk egg yolks in a bowl until they are foamy and light

Slowly add the warm cream mixture while whisking the eggs all the time

Put the mixture back in the saucepan

Cook over medium heat, stirring all the time, for about 5 to 7 minutes, or until it thickens and coats the back of a spoon

Use a fine-mesh sieve to pour the custard into a clean bowl

Throw away the vanilla bean pod

Allow to cool completely

Put the custard in the fridge for at least four hours or overnight

Follow the directions that came with the ice cream maker to make the custard

Add spoonfuls of the roasted strawberry rhubarb mixture to the cream in the last few minutes of churning to make swirls

Put the ice cream in a container and freeze it for four hours, or until it is firm

Serve and have fun!

Light Swiss Chard Frittata

Ingredients:

  • 6 large eggs
  • 1 cup Swiss chard, chopped
  • 1/2 cup grated Parmesan cheese

Instructions:

Pour the egg mixture over the Swiss chard and cook without stirring for about 5 minutes or until the edges start to set

Transfer the skillet to the preheated broiler and broil for 2-3 minutes or until the top is golden and the frittata is cooked through

Remove from the oven, let it cool slightly, and then slice into wedges

Serve your Light Swiss Chard Frittata warm and enjoy!
