Quinoa Vegetarian Falafel Bowls with Beet Noodles

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups cooked vegetarian falafel, crumbled
  • 2 cups beet noodles
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Greek yogurt
  • 2 tablespoons tahini
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

Cook quinoa according to package instructions

In a large bowl, assemble the bowls by layering cooked quinoa, crumbled falafel, beet noodles, sliced cucumber, and cherry tomatoes

In a separate bowl, whisk together Greek yogurt, tahini, minced garlic, lemon juice, salt, and pepper to create a creamy dressing
