Ingredients:
- 6 large eggs
- 1 cup Swiss chard, chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 onion, diced
- 1 clove garlic, minced
Instructions:
Preheat your oven broiler
In a bowl, whisk together the eggs, milk, grated Parmesan cheese, salt, and pepper
Set aside
Heat olive oil in an ovenproof skillet over medium heat
Add the diced onion and minced garlic
Saut until softened, about 2-3 minutes
Add the chopped Swiss chard to the skillet and cook for an additional 2-3 minutes until wilted
Pour the egg mixture over the Swiss chard and cook without stirring for about 5 minutes or until the edges start to set
Transfer the skillet to the preheated broiler and broil for 2-3 minutes or until the top is golden and the frittata is cooked through
Remove from the oven, let it cool slightly, and then slice into wedges
Serve your Light Swiss Chard Frittata warm and enjoy!
